FLOURLESS WAFFLES
MAKES 5 servings PREP TIME: 5 minutes COOK TIME: 15 minutes
INGREDIENTS
- 8 large eggs
- 1 cup smooth unsweetened almond butter (see Tip)
- 1 tablespoon granulated sweetener
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Cooking spray
FOR SERVING (OPTIONAL):
- Sugar-free maple syrup, store-bought or homemade
- Next-Level Whipped Cream
- Fresh blueberries or other berries of choice
- Chopped cooked bacon
INSTRUCTIONS
- Preheat a waffle maker.
- Place all the ingredients in a blender and blend until smooth.
- Once the waffle maker is hot, spray it with cooking spray. Pour the recommended amount of batter into each section of the waffle
maker and cook according to the manufacturer’s instructions. Repeat until all the batter has been used. - Serve topped with sugar-free maple syrup, whipped cream, berries, and/or chopped cooked bacon, if desired.
- Store leftovers in the refrigerator for up to 1 week. Reheat in a toaster oven.
TIP: For almond butter, Julie loves to use the grind-your-own machine at the grocery store. That way, she knows she’s getting only almonds.
